“Lightness, delicacy and freshness.”

Most of our Champagnes are made of a blending of wines that have undergone their malolactic fermentation and other not only the vintage Champagnes were fully vinified without malolactic fermentation to retain their freshness in time.

Primary fermentation takes place in stainless steel tanks. Clarification involves only filtering but no centrifuging. Blended wines are finally bottled to start their secondary fermentation “Prise de mousse”, 6 to 8 months after the harvest.

Conservation “sur lattes” (maturation on lees in the bottle): 2 to 3 years for non-vintage Cuvées and 5 years for vintage Champagnes.

Storage after disgorging: 3 to 6 months depending on he season’sales.

The dosage or “liqueur d’expédition” is only based on Chardonnay wines so that it doesn’t mark aromatically the vintage Cuvées.

Our environmental commitment

The High Environmental Value (HVE3) is the highest level of a generalized environmental certification system for vineyards.

It is the only sustainable viticulture certification resulting from the Grenelle de l’Environnement (decision of the Ministry of Ecology and Sustainable Development in 2007). As this is an official process, governed by law, a very strict audit must be carried out on the entire estate to obtain certification.

This is a voluntary process that aims to identify and promote particularly environmentally friendly practices applied by the winegrowers.

For example, Champagne Chapuy uses sexual confusion, a biotechnological technique that allows winegrowers to eliminate insecticides. This consists of confusing insects with pheromones, thus preventing their reproduction.

– We respect the ecosystem in which we work the vine and produce our wine: biodiversity is promoted by the development of the vineyard, and the fauna and flora are thus preserved.

– We contribute to the preservation of the beauty of the vineyard landscape, for example by naturally grassing our vineyards: grass, flowers and vines thus form harmonious and balanced panoramas in our terroirs.

In order to respect our environment as much as possible, we implement healthy and sustainable viticulture in our vineyards. Some of our plots are worked with a draught horse, especially for the work of the soil.
